Toast & Eggs Breakfast Cups

Ingredients

 • 6 large eggs
 • 1/4 cup diced bacon
 • 2 tbsp cottage cheese
 • 9 slices of bread
 • 2 tbsp Mavella Superfoods Veggie Boost
 • Fresh herbs

Method:
 1. Roll the slices of bread with a rolling pin until flattened (crusts optional).
 2. Place each slice into a greased muffin pan and press down to make cups.
 3. Add the eggs, diced bacon, cottage cheese and Mavella Superfoods Veggie Boost to a bowl and whisk well.
 4. Pour the mixture into each cup and bake for about 20 minutes, until the egg is completely cooked.
 5. Serve warm or freeze and reheat next morning
