Mexican “Chilaquiles”
Ingredients
• 4 corn tortillas / a bunch of nachos
• 2 tbsp olive oil
• 150g cup marinara sauce
• 1 tbsp Mavella Superfoods Veggie Boost
• Toppings: cottage cheese, sliced avocado, sliced red onion, red beans, jalapeño (optional), cilantro, fried egg
Method:
1. If using tortillas, preheat the oven and slice them into wedges. Bake for 10 minutes until crispy.
2. Heat 1 tsp olive oil and the marinara sauce and let simmer for 2-3 minutes. Remove from the heat and dissolve Mavella Superfoods Veggie Boost in it.
3. Add the tortilla chips or nachos and toss until completely coated by the sauce.
4. Fry the egg. Meanwhile, slice and prepare the rest of the ingredients. Add all the toppings to your chilaquiles and enjoy!
