Potato Beetroot Soup

Ingredients

 • 300g potatoes
 • 1/4 red onion
 • 1 garlic clove
 • 2 tbsp olive oil
 • 1 tsp dried thyme or basil
 • 2 cups vegetable broth
 • 2 tbsp Mavella Superfoods Australian Grown - Beetroot
 • Croutons

Method:
 1. Chop the red onion and garlic. Cook in a pot on low heat with the olive oil until translucent.
 2. Chop the potatoes and add them to the pot. Sauté for a couple of minutes, then add the vegetable broth and herbs.
 3. Let simmer until the potatoes are cooked through.
 4. Place the soup in a blender and add a couple tbsp Mavella Superfoods Australian Grown Beetroot. Pulse until creamy.
 5. Pour back in the pot and heat to serving temperature. Drizzle with thickened cream and top with croutons
