Zucchini-Lemon Poppy Speed Muffins

Ingredients

 • 1 cup flour
 • 1 cup instant oats
 • 1/2 tsp baking powder
 • Pinch of salt
 • 2 eggs
 • 1/2 cup plain greek yoghurt
 • 1/3 cup organic sugar
 • 3 tbsp olive oil
 • 1 tbsp Mavella Superfoods Gut Boost
 • Zest and juice of 1 lemon
 • 1 1/2 tbsp poppy seeds
 • 1 1/2 cups shredded zucchini

Method:
 1. In the bowl of a stand mixer, mix together the eggs and sugar until fluffy.
 2. Add the yoghurt, shredded zucchini, lemon juice and zest, olive oil and Mavella  Superfoods Gut Boost and mix until just combined.
 3. Add the flour, instant oats, baking powder, salt and poppy seeds to the mixer and mix 
well.
 4. Fill the muffin tray with the batter and bake for 25-30 minutes until set.
 5. Allow to cool on a rack.
