Raspberry Rice Pudding

Ingredients

  • 2 1/4 cups milk
  • 1 cup rice
  • 1/4 cup erythritol (or your favourite sweetener) - monk fruit
  • 1 cinnamon stick
  • 1 tbsp butter
  • 1/2 tsp vanilla extract
  • 1/4 cup whipping cream 
  • 2 tsp Mavella Superfoods Mixed Berries
  • 1/4 cup fresh raspberries

Method:

  1. Place the milk, rice, sweetener and cinnamon in a small saucepan in low heat.
  2. Simmer 35 minutes, stirring occasionally until almost all the liquids are absorbed by the rice.
  3. Add the vanilla extract, whipping cream and Mavella Superfoods Mixed Berries, stir until combined.
  4. Serve in ramekins and top with raspberries and mint.
  5. Enjoy!
