Spinach Pesto Toast

Ingredients

  • Toasted bread slices
  • 1 cup basil leaves
  • 1-2 garlic cloves
  • 1/4 cup olive oil
  • 1/4 cup almonds
  • 2 tbsp parmesan cheese
  • 1 tbsp lemon juice
  • 1 tbsp Mavella Superfoods - Spinach
  • Toppings: Halved cherry tomatoes, sea salt, greek yogurt

Method:

  1. Toast the sliced sourdough bread and set aside.
  2. Place all the ingredients in a food processor and pulse until smooth.
  3. Save in an airtight container in the refrigerator.
  4. Spread the greek yogurt on your toast and top with a couple tsp of the spinach pesto, cherry tomatoes and sprinkle with sea salt.
