Ingredients
• 1 cup pineapple, cut into small squares
• 1 tbsp coconut oil
• 1 tbsp coconut sugar
• 1/4 cup coconut yogurt
• 2/3 cup coconut milk
• 2 tsp honey
• 1/2 cup oats
• 1 tbsp Mavella Superfoods Gut Boost
• Toasted coconut flakes
Method:
1. Place the diced pineapple on a baking pan and toss with coconut oil and coconut sugar. Bake for about 20 minutes al 180c until caramelized.
2. Prepare the overnight oats by mixing the rest of the ingredients in a small container. Place in the refrigerator overnight or for a couple of hours.
3. When ready to eat, top the overnight oats with the roasted pineapple and toasted coconut flakes. Enjoy!
