Mini Taco Cups

Ingredients

  • 250g mince
  • 18 tortilla wraps cut to 8cmx8cm squares
  • 1 cup shredded cheese
  • 1 avocado
  • 1 cup diced tomatoes
  • 1/2 cup red onion
  • 1/2 cup cream cheese
  • 1 tb spoon Mavella Superfoods Veggie Boost
  • Garlic powder, chilli flakes, paprika, sea salt to taste.

Method

  1. 1. Heat a bit of olive oil in a skillet over low-medium heat. Add the mince and Mavella Superfoods Veggie Boost, garlic powder, and sea salt to taste. Cook thoroughly for 5/7 min.
  2. Preheat oven to 180c. Spray a muffin pan with cooking spray.
  3. Cut the tortillas to fit perfectly in the muffin pan. Place them in the muffin cavities and press down.
  4. Top with 1 tb spoon meat and 1 tb spoon grated cheese. Bake for 10 min, until cheese is melted.
  5. Carefully remove cups from muffin pan, place on cooling rack and top with chopped avocado, tomatoes, cream cheese and red onion.
