Ingredients
- 450g minced beef
- 2 tbsp finely chopped chives
- 1/2 cup breadcrumbs
- 2 tbsp ketchup
- 1 egg
- 1/4 cup milk
- 2 cups mashed potatoes
- Chopped chives for garnish
- 1 tbsp Mavella Superfoods Veggie Boost
Method:
- Preheat the oven to 180c.
- In a large bowl, mix together the minced beef, breadcrumbs, egg, ketchup, milk, chives and Mavella Superfoods Veggie Boost.
- Press the mixture into muffin tins (lined with parchment paper) or silicone molds. Bake for 30 minutes or until cooked through.
- While the meatloaf's bake, prepare the mashed potatoes, whipping until light and fluffy.
- Let the meatloaf's cool slightly, then remove from the muffin pan and pipe the mashed potatoes on top.
- Garnish with chopped chives and serve warm.
