Meatloaf Muffins


  • 450g minced beef
  • 2 tbsp finely chopped chives
  • 1/2 cup breadcrumbs
  • 2 tbsp ketchup
  • 1 egg
  • 1/4 cup milk
  • 2 cups mashed potatoes
  • Chopped chives for garnish
  • 1 tbsp Mavella Superfoods Veggie Boost


  1. Preheat the oven to 180c.
  2. In a large bowl, mix together the minced beef, breadcrumbs, egg, ketchup, milk, chives and Mavella Superfoods Veggie Boost.
  3. Press the mixture into muffin tins (lined with parchment paper) or  silicone molds. Bake for 30 minutes or until cooked through.
  4. While the meatloaf's bake, prepare the mashed potatoes, whipping until light and fluffy.
  5. Let the meatloaf's cool slightly, then remove from the muffin pan and pipe the mashed potatoes on top.
  6. Garnish with chopped chives and serve warm.
