Ingredients
- 2 eggs
- 2 cups leftover rice
- 1 tbsp Mavella Superfoods Veggie Boost
- 1/2 cup grated cheese
- Ham & cheese
- Veggies as toppings
Method:
- In a large bowl, mix the eggs with Mavella Superfoods Veggie Boost until dissolved.
- Add the leftover rice and continue mixing until completely combined. Mix in the grated cheese.
- Heat the skillet and cook a couple spoonful's of the mixture, making a circle with a spatula (or pancake mold). Flip and cook on both sides until golden.
- Make a sandwich with two fritters, ham and cheese, and add veggies as toppings.
