Flaked Almond & Pumpkin Seed Cookies


  • 1 cup pumpkin seeds
  • 1 cup flaked almonds
  • 1 cup coconut flakes
  • 1/4 cup honey or maple syrup
  • 2 egg whites
  • 1/4 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 cup chocolate chips + 1 tsp coconut oil
  • 1 tbsp Mavella Superfoods  - Spinach


  1. Preheat the oven to 180c.
  2. In a large bowl mix the flaked almonds, pumpkin seeds and coconut flakes.
  3. Add the honey, egg whites, vanilla, sea salt and Mavella Superfoods Spinach and mix until everything is perfectly distributed.
  4. Line a baking sheet with parchment paper or a silicone mat and spoon a couple tbsp onto it to shape the cookies.
  5. Bake for 12 minutes and leave the cookies to cool for about 15 minutes before transferring to a rack.
  6. Melt the chocolate chips with coconut oil and cover one side of the cookies.
