Ingredients
- 1 cup pumpkin seeds
- 1 cup flaked almonds
- 1 cup coconut flakes
- 1/4 cup honey or maple syrup
- 2 egg whites
- 1/4 tsp vanilla extract
- 1/4 tsp sea salt
- 1/2 cup chocolate chips + 1 tsp coconut oil
- 1 tbsp Mavella Superfoods - Spinach
Method:
- Preheat the oven to 180c.
- In a large bowl mix the flaked almonds, pumpkin seeds and coconut flakes.
- Add the honey, egg whites, vanilla, sea salt and Mavella Superfoods Spinach and mix until everything is perfectly distributed.
- Line a baking sheet with parchment paper or a silicone mat and spoon a couple tbsp onto it to shape the cookies.
- Bake for 12 minutes and leave the cookies to cool for about 15 minutes before transferring to a rack.
- Melt the chocolate chips with coconut oil and cover one side of the cookies.
