- 1/4 onion
- 1-2 tomatoes
- 400g spinach
- 1 cup whipping cream
- 1/4 cup milk of choice
- 1 tsp Mavella Superfoods Veggie Boost
- Chop the onion and tomatoes and place in a saucepan on low heat. Drizzle with olive oil and cook until tender. Set aside.
- Cook the spinach until softened (about a minute) and set aside.
- In a blender, place the veggies, whipping cream, milk and Mavella Superfoods Veggie Boost. Blend until smooth.
- Pour the soup back into the saucepan and cook until bubbly.
- Serve warm with toasted bread and grated cheese. Enjoy!
