Ingredients
- 300g potatoes
- 1 tbsp grated parmesan cheese
- 2 tbsp cornstarch
- 1 tbsp Mavella Superfoods Veggie Boost
- 200g mozarella, cut in cubes
- Egg wash: 1 egg + 1 tbsp water or milk
Method:
- Cook the potatoes in boiling water. Drain the water and place in a large bowl while still warm.
- Add the rest of the ingredients: Mavella Superfoods Veggie Boost, cornstarch and grated parmesan cheese and mash until completely combined.
- Let cool down until its easier to handle. Make balls with the dough (about 1-2 tbsp each), placing a mozzarella square in the middle.
- Place on a baking pan. Brush with egg wash and bake for 25 minutes or until golden.
- Serve with your favourite dips!
