Air-Fryer Butternut Squash Rings

Ingredients

 • 1 butternut squash
 • 2 eggs
 • 1/4 cup cornstarch
 • 1/2 cup breadcrumbs 
• 1 tbsp mixed seeds (flax, chia, sunflower, etc)
 • 1 tbsp Mavella Superfoods Veggie Boost

Method:
 1. Peel and cut the butternut squash into thick rings, taking the seeds out.
 2. Cook the rings slightly in boiling water so they’re tender but still hold their shape.
 3. Beat the eggs with Mavella Superfoods Veggie Boost in a bowl and mix the seeds with the breadcrumbs. Place on a plate and place the cornstarch on another. 
4. Place them one by one into the cornstarch, then the egg mixture, then breadcrumb mixture until all of them are covered.
 5. Place the rings in the airfryer and cook until crispy.
 6. Enjoy with dips, hummus or soup!
