Winter Salad with Mango Dressing

Ingredients

  • 1/2 small butternut squash
  • 200g brussel sprouts
  • 1/2 red onion
  • 30g pecans
  • 1 tbsp white sesame seeds
  • 2 tbsp olive oil
  • 1 tbsp Mavella Superfoods - Mango
  • 1 tbsp plain greek yoghurt
  • 1 tbsp maple syrup
  • Sea salt

Method:

  1. Cut the butternut squash into cubes and halve the Brussel sprouts.
  2. Place in a baking tray and drizzle with olive oil and sea salt. Bake at 200c for about 30 minutes, until soft.
  3. Place the pecans and white sesame seeds over the veggies and roast for 10 more minutes.
  4. Meanwhile, prepare the dressing by mixing the olive oil, plain greek yoghurt, maple syrup and Mavella Superfoods Mango. Stir until smooth.
  5. When ready, take the veggies out of the oven an cool for a couple of minutes before transferring to a salad plate.
  6. Top with the red onion and drizzle with dressing
