Ingredients
- 1/2 small butternut squash
- 200g brussel sprouts
- 1/2 red onion
- 30g pecans
- 1 tbsp white sesame seeds
- 2 tbsp olive oil
- 1 tbsp Mavella Superfoods - Mango
- 1 tbsp plain greek yoghurt
- 1 tbsp maple syrup
- Sea salt
Method:
- Cut the butternut squash into cubes and halve the Brussel sprouts.
- Place in a baking tray and drizzle with olive oil and sea salt. Bake at 200c for about 30 minutes, until soft.
- Place the pecans and white sesame seeds over the veggies and roast for 10 more minutes.
- Meanwhile, prepare the dressing by mixing the olive oil, plain greek yoghurt, maple syrup and Mavella Superfoods Mango. Stir until smooth.
- When ready, take the veggies out of the oven an cool for a couple of minutes before transferring to a salad plate.
- Top with the red onion and drizzle with dressing
