Sweet Potato Tots
- 2 medium sweet potatoes
- 1 tsp salt
- 1 tsp parsley, thyme, oregano.
- Drizzle of olive oil
- 1 tbsp Mavella Superfoods Veggie Boost
- Preheat the oven to 200c.
- Peel the sweet potatoes and place them in a pot with water. Bring to a boil and simmer for 10 min, until soft but still firm.
- Once cool, grate the sweet potatoes. In a bowl, mix them with salt, herbs and Mavella Superfoods Veggie Boost.
- Take 1-2 tsp and form into 1 inch tots, place on a baking sheet drizzled with oil.
- Bake for 30 min or until brown on each side.
- Sprinkle with salt and pepper (optional) and serve with sauce
