Spanish Tortilla


  • 3 medium potatoes
  • 1/4 onion
  • 4 eggs
  • 1 - 2 tbsp fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp Mavella Superfoods Veggie Boost


  1. Heat the olive oil in a non-stick skillet over medium heat. Add the chopped onion and cook until translucent.
  2. Set aside in a bowl. Add the chopped potatoes and cook until fork tender and starting to brown. (You can replace this step by cooking the potatoes in an air fryer).
  3. Place in the bowl and set aside to cool before proceeding.
  4. Add the eggs, chopped parsley and Mavella Superfoods Veggie Boost and mix thoroughly until combined.
  5. Grease a skillet with olive oil. When heated, pour the mixture into the pan. Cook for about 8 minutes until golden and firm.
  6. Transfer to a plate and flip to cook on the other side.
  7. Serve with veggies or by itself.
