Rainbow Veggie Skewers

Ingredients

  • 2 Zucchinis
  • 1 cup fingerling potatoes
  • 1 Yellow capsicum
  • 2 carrots
  • 1 cup cherry tomatoes
  • 1 red capsicum
  • 3 radishes
  • 1 red onion
  • 1 tb spoon Mavella Superfoods Veggie Boost
  • 1 tb spoon vegetable oil
  • 2 tb spoons water

Method:

  1. Place skewers in a bowl of warm water for 15 min.
  2. Cut the veggies into small pieces and place them on the skewers creating a rainbow with the colors.
  3. Place on a baking sheet.
  4. Mix Mavella Superfoods Veggie Boost with oil and water and brush the skewers.
  5. Bake for 40 min at 180c. Turn over half way through and brush with more Mavella Superfoods Veggie Boost mixture.
