Marble Lemon Curd Pie

Ingredients

 For the crust:
 • 1 1/2 cups almond flour
 • 1/2 cup coconut flour
 • 1/4 cup powdered sweetener (like erythritol or monk fruit)
 • 1/4 tsp vanilla extract
 • 3 tbsp melted butter
 • 1 egg
 For the Filling:
 • 1/2 cup lemon juice
 • 1/2 cup powdered sweetener
 • 4 egg yolks
 • 1 egg
 • 1 tbsp lemon zest
 • 4 tbsp butter
 • 1 tbsp Mavella Superfoods All Things Blue
 • A couple tbsp greek yoghurt
 
Method:
 1. In a heat proof bowl, combine the egg, egg yolks, lemon zest, juice and powdered sweetener. Whisk to combine.
 2. Fill a pot with water to create a double boiler. Over medium heat, place the bowl on top and whisk constantly for about 10 minutes or until it thickens.
 3. Strain through a mesh and add the butter, Mavella Superfoods All Things Blue and mix well. Cover and place in the refrigerator until ready to fill the pie.
 4. Preheat the oven to 180c. Combine all the crust ingredients in a bowl and mix with a spatula to combine.
 5. Press the dough into your pie pan and poke holes all around the bottom with a fork. Bake for 15 minutes or until golden. 
6. When cooled down, fill the pie. Add a couple strokes of greek yoghurt to the top of the pie and blend it for just a bit. Place In the refrigerator to harden for a couple of hours
