High Protein Berries Cheesecake

Ingredients

  • 200g cottage cheese
  • 1/4 cup greek yoghurt
  • 1 tbsp lemon juice 
  • 1/4 cup all-purpose flour 
  • 1/4 tsp baking powder
  • 1 tbsp maple syrup
  • 1 egg
  • Small splash of vanilla extract
  • 1 tbsp Mavella Superfoods  - Mixed Berries
  • Toppings: sliced strawberries, greek yoghurt, maple syrup, flaked almonds.

Method:

  1. Place all ingredients in a blender and blend. Scrape the sides a couple of times until smooth.
  2. Prepare the ramekin and brush with coconut oil. Pour the cheesecake batter inside and bake for 15-20 minutes.
  3. Let cool and top with greek yoghurt, sliced strawberries, flaked almonds and a drizzle of maple syrup.
