Ingredients
- 200g cottage cheese
- 1/4 cup greek yoghurt
- 1 tbsp lemon juice
- 1/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1 tbsp maple syrup
- 1 egg
- Small splash of vanilla extract
- 1 tbsp Mavella Superfoods - Mixed Berries
- Toppings: sliced strawberries, greek yoghurt, maple syrup, flaked almonds.
Method:
- Place all ingredients in a blender and blend. Scrape the sides a couple of times until smooth.
- Prepare the ramekin and brush with coconut oil. Pour the cheesecake batter inside and bake for 15-20 minutes.
- Let cool and top with greek yoghurt, sliced strawberries, flaked almonds and a drizzle of maple syrup.
