- 2 eggs
- 2 tbsp milk
- 1/4 cup all-purpose flour
- 1/4 tsp b. Powder
- 1/2 tsp white vinegar
- 2 tbsp organic sugar (or sweetener of choice)
- Coconut oil
- 1 tbsp Mavella Superfoods Gut Boost
- Separate the egg whites and yolks into two bowls.
- Into the egg yolks, add the milk and Mavella Superfoods Gut Boost. Whisk well
- Fold in the flour and baking powder. Mix well and set aside.
- Add the vinegar to the egg whites and beat with a hand mixer until frothy. Gradually add the organic sugar or sweetener of choice. Continue beating until stiff peaks form.
- Add the egg whites meringue gradually to the egg yolk mixture, folding it in slowly so it doesn’t deflate.
- Heat a large nonstick skillet over low heat and lightly grease with coconut oil.
- Scoop the batter onto the skillet, keeping it tall. Cover with a lid and cook for about 7 minutes. Flip and cook on the other side.
- You can top with fruits, whipped cream, honey, maple, or your favorite toppings!
