- 4 large hardboiled eggs
- 2 tbsp mayonnaise
- 8 slices white bread
- Butter (optional)
- 2 tbsp chopped celery
- Chopped parsley
- 1 tbsp Mavella Superfoods Veggie Boost
- 1. Add all the ingredients (except the bread) into a food processor and pulse 2-3 times until everything is chopped and mixed.
- Toast the bread slices slightly (brush with butter if you like) then spread the egg salad mixture between two slices.
