Egg Cherry Blossom Toast

Ingredients

 • 3 eggs
 • 2 cups water
 • 1 tbsp Mavella Superfoods Beetroot
 • For the toast: 1 ciabatta bread, 1 avocado, 1 tbsp plain greek yoghurt, olive 
oil, splash of lemon juice, balsamic vinegar, sesame seeds, basil leaves.

Method:
 1. Place the eggs in a small pot with water and boil for 12-15 minutes until hardened.
 2. Dissolve Mavella Superfoods Beetroot in water and pour into a fridge friendly container.
 3. Peel the eggs and shape them using a couple of skewers and elastic bands.
 4. Place the shaped eggs in the container and cover. Place in the refrigerator for a couple of hours or over night.
 5. When ready, make a spread processing the avocado, greek yoghurt, olive oil, lemon juice and some basil.
 6. Toast the ciabatta bread, spread the avocado on top and add a couple of slices of your shaped egg cherry blossoms. 
7. Top with basil leaves, olive oil, balsamic vinegar and sesame seeds. Enjoy!
