Ingredients

Method:

  1. In a bowl, mix the tuna, mayonnaise and Mavella Superfoods Veggie Boost. Set aside.
  2. Slice both ends to the cucumbers and then cut into two sections.
  3. Remove the center of the cucumbers with an apple corer or a knife. Slice the carrot and capsicum into thin strips.
  4. Fill the center of the cucumbers with a couple veggie slices, then add the tuna mixture (use a pipping bag for easier access).
  5. Cut into sushi slices and serve with low sodium aminos / soy sauce and sesame seeds
