- 2 cucumbers
- 1 can tuna
- 1/4 cup mayonnaise
- 1 carrot • 1/2 capsicum
- 1 tbsp Mavella Superfoods Veggie Boost
- In a bowl, mix the tuna, mayonnaise and Mavella Superfoods Veggie Boost. Set aside.
- Slice both ends to the cucumbers and then cut into two sections.
- Remove the center of the cucumbers with an apple corer or a knife. Slice the carrot and capsicum into thin strips.
- Fill the center of the cucumbers with a couple veggie slices, then add the tuna mixture (use a pipping bag for easier access).
- Cut into sushi slices and serve with low sodium aminos / soy sauce and sesame seeds
