Ingredients
- 3 cups milk
- 1/2 cup rice
- 2 drops vanilla extract
- Pinch of cinnamon
- 1/4 cup organic sugar
- 1/4 tsp sea salt
- 2 egg yolks
- 1 tbsp Mavella Superfoods - Mixed Berries
- Caramel: 3 tbsp organic sugar + 1 tbsp water
Method:
- Preheat the oven to 180c. Combine milk, rice, cinnamon and vanilla extract into a medium saucepan. Bring to a simmer.
- Cook, stirring occasionally until the rice has absorbed almost all the liquid. Remove from heat.
- Whisk in the organic sugar, sea salt, egg yolks and Mavella Superfoods Mixed Berries. Mix until completely combined, bring to a simmer.
- Prepare the caramel by heating the sugar and water, mix until dissolved and cook until slightly golden.
- Butter 6 small ramekins or silicone molds and add the caramel to the bottom. Fill with the pudding on top and bake for 15 minutes. Allow to cool for 10 minutes.
