Caramelized Berries Rice Puddings


  • 3 cups milk
  • 1/2 cup rice
  • 2 drops vanilla extract
  • Pinch of cinnamon
  • 1/4 cup organic sugar
  • 1/4 tsp sea salt
  • 2 egg yolks
  • 1 tbsp Mavella Superfoods  - Mixed Berries
  • Caramel: 3 tbsp organic sugar + 1 tbsp water


  1. Preheat the oven to 180c. Combine milk, rice, cinnamon and vanilla extract into a medium saucepan. Bring to a simmer.
  2. Cook, stirring occasionally until the rice has absorbed almost all the liquid. Remove from heat.
  3. Whisk in the organic sugar, sea salt, egg yolks and Mavella Superfoods  Mixed Berries. Mix until completely combined, bring to a simmer.
  4. Prepare the caramel by heating the sugar and water, mix until dissolved and cook until slightly golden.
  5. Butter 6 small ramekins or silicone molds and add the caramel to the bottom. Fill with the pudding on top and bake for 15 minutes. Allow to cool for 10 minutes.
