Ingredients
- 6 large eggs
- 1/2 cup grated Parmesan cheese
- 1/4 cup whipping cream
- 1/2 tbsp Mavella Superfoods Veggie Boost
- Sea salt & pepper, green onion (optional)
Method:
- Preheat the oven to 180c and spray a muffin pan with cooking oil.
- Crack the eggs, one into each muffin cup.
- Mix Mavella Superfoods Veggie Boost into the whipping cream.
- Add about 1/2 tbsp of the cream over the eggs, sprinkle with salt & pepper (if using) and add the Parmesan cheese on top.
- Cook for 10-12 minutes depending on how firm you like your eggs.
- Garnish with more Parmesan cheese and chopped green onion. You can serve with whole wheat toasts.
